Use Leftover Bacon Grease to Elevate Roasted Potatoes & Broccoli

Looking to Up the Flavor on Your Boring Potatoes & Broccoli?  This quick and easy recipe will turn your bland side dishes into the star of the show!

Ingredients (serves 2 - 4)

  • 1 - 2 bags of petite or little potatoes
  • 2 - 4 broccoli crowns
  • 2 - 4 tbsp of olive or avocado oil (adjust to taste)
  • 3 - 6 tbsp of leftover bacon grease (adjust to taste)
  • Course ground sea salt (to taste)

How to Prepare

  1. Prepare the potatoes:  Preheat your oven to 425°F (220°C).  Quarter the potatoes and toss in a mixing bowl with oil and sea salt.  Spread on a baking sheet and place in the oven to begin cooking.  Leave in the oven while you prepare the bacon grease and broccoli, or for at least 10 minutes.

  2. Melt the bacon grease:  Head to fridge and pull out the Piggy Pouch that you've been using to store your leftover bacon grease.  Scoop 3 - 6 tablespoons into a small sauce pan, put on the stove, and set the heat to low.

  3. Prepare the broccoli:  Cut the broccoli heads off the stem and then trim to desired size and toss in a mixing bowl.

  4. Mix everything together:  Remove the potatoes from the oven and add back into the mixing bowl with the broccoli.  Drizzle in the melted bacon grease and add sea salt to taste.  Use a spoon to mix thoroughly and spread the potatoes and broccoli back on the baking sheet.



  5. Cook and Enjoy!  Cook in the oven for 15 - 20 minutes, or until both potatoes and broccoli have reached your desired level of doneness.  Remove from the oven and get ready to enjoy some bacon-flavored goodness!
