Looking to Up the Flavor on Your Boring Potatoes & Broccoli? This quick and easy recipe will turn your bland side dishes into the star of the show!
Ingredients (serves 2 - 4)
- 1 - 2 bags of petite or little potatoes
- 2 - 4 broccoli crowns
- 2 - 4 tbsp of olive or avocado oil (adjust to taste)
- 3 - 6 tbsp of leftover bacon grease (adjust to taste)
- Course ground sea salt (to taste)
How to Prepare
-
Prepare the potatoes: Preheat your oven to 425°F (220°C). Quarter the potatoes and toss in a mixing bowl with oil and sea salt. Spread on a baking sheet and place in the oven to begin cooking. Leave in the oven while you prepare the bacon grease and broccoli, or for at least 10 minutes.
-
Melt the bacon grease: Head to fridge and pull out the Piggy Pouch that you've been using to store your leftover bacon grease. Scoop 3 - 6 tablespoons into a small sauce pan, put on the stove, and set the heat to low.
-
Prepare the broccoli: Cut the broccoli heads off the stem and then trim to desired size and toss in a mixing bowl.
-
Mix everything together: Remove the potatoes from the oven and add back into the mixing bowl with the broccoli. Drizzle in the melted bacon grease and add sea salt to taste. Use a spoon to mix thoroughly and spread the potatoes and broccoli back on the baking sheet.
-
Cook and Enjoy! Cook in the oven for 15 - 20 minutes, or until both potatoes and broccoli have reached your desired level of doneness. Remove from the oven and get ready to enjoy some bacon-flavored goodness!
